WINE CABINET AT 13ºC

A young Syrah with ambition: ripe black fruit, balsamic notes, spices, and a full-bodied palate with present yet fine tannins. A highly gastronomic red wine with excellent aging potential. VINEYARD IN ANTAS Vines at 400 m altitude in Antas (Almería). PRODUCTION AND AGING Harvested in 15 kg crates, double selection. Fermentation in stainless steel at 23/25°C with gentle pump-overs (2–3). After gentle pressing and malolactic fermentation, aged on lees for several months until bottling. TASTING NOTE Very intense cherry red with an almost bluish rim. Nose of blackberries, cassis, cherry, and plum; balsamic and spices, with notes of chocolate and tobacco. Unctuous, voluminous palate, fine tannins, good acidity, and a long finish. SERVICE AND PAIRING With cured meats, cheeses, pasta, and flavorful stews; also with grilled red meats or meats in sauce.
